Hi! Welcome to my blog! My name is Stacy and I’m a family medicine doctor living in Seattle, Washington. My vision for this blog is to share my journey toward plant based eating.
I’ve always had a passion for good food and started my first food blog in 2012. It was a way for me to share and keep track of recipes I was making. I am an avid follower of food blogs and it felt really fun to create new recipes and share them.
At the end of medical school, I read The China Study by T. Colin Campbell, PhD which compared health outcomes of people living in rural China eating a low animal protect, high fiber diet versus the regular Western diet which is rich in animal products and low in fiber. I found this book fascinating and made the switch to cooking 95% vegetarian at home.
I completed my medical training and residency in Family Medicine and started my work as a primary care doctor. In August of 2019 my co-worker mentioned Joel Fuhrman’s book, Eat to Live, to a patient. I was curious and borrowed the book from the library. I found the case for whole food, plant based diet to be compelling and started to do more reading and research on health outcomes with a plant based diet.
I’m now transitioning to a mostly plant based diet at home. My vision for this blog is to share my journey toward plant based eating and include plant based recipes that are delicious and nutritious. Go Plants!
